Estamos na época do tomate, a melhor do ano, sem dúvida alguma. E que sorte é ter uma horta cheia destas maravilhas, várias variedades, todas elas distintas mas muito saborosas. E a receita que partilho hoje é mesmo para celebrar os tomates!
It’s tomato season, the best season of the year! And I’m so lucky for having a garden full of these delicious varieties of tomatoes. And today’s recipe it’s to celebrate them!
Ingredients:
– 4 tomatoes (I used brandywine tomatoes) / 4 tomates (usei coração de boi)
– 1 onion / 1 cebola
– 1 garlic clove / 1 dente de alho
– slice of red bell pepper / fatia de pimento vermelho
– 1 small zucchini / 1 courgette pequena
– 1/4 of a cauliflower (only 3 small pieces) / 1/4 de couve flor (apenas 3 pedaços pequenos)
– salt and pepper / sal e pimenta
–fresh coriander / coentros frescos
– olive oil / azeite
– croutons (optional) / croutons (opcional)
- Preparar os legumes: retirar a pele aos tomates e cortar em pedaços pequenos, cortar o courgette do mesmo tamanho, a cebola , o pimento, a couve flor e descascar o dente de alho. Colocar tudo dentro de uma panela juntamente com os coentros, sal, pimenta e um fio de azeite. Juntar água até tapar os legumes.
- Tapar a panela e deixar cozer em lume baixo durante 25minutos.
- Triturar tudo com uma varinha mágica ou liquidificadora até ter uma consistência cremosa mas não muito espessa.
- Para os croutons: cortar cubos de pão e fritar num fio de azeite com sal, ervas secas a gosto e pimenta.
- Vegetables prep: peel the tomatoes and cut into small pieces, cut the zucchini, onion, pepper, cauliflower and peel the garlic. Put the vegetables in a pan and add the coriander, salt, pepper and a drizzle of olive oil. Add water to cover the ingredients.
- Cover the pan and let it cook in low heat for about 25minutes.
- Puree the soup with a hand blender until you have a creamy but not too dense consitency.
- To make the croutons: Cut some bread cubes and fry with a drizzle of olive oil, dried herbs, salt and pepper.
